White Chocolate Cranberry Bark

White Chocolate Cranberry Bark is an ideal recipe for the holidays. The seasonal flavors of white chocolate and cranberry come together in this delectable treat. It's super simple to make which means you can quickly and easily whip up multiple batches. That also means there will be plenty of pieces to enjoy at home and still others to tuck inside containers like Rubbermaid's TakeAlongs to share with family and friends.

Bark recipes are one of my favorite things to make. You may remember the frozen yogurt bark I made back in May. This recipe is much more indulgent, but the holidays are the perfect time to splurge a little. Wouldn't you agree? This white chocolate bark is just as simple as the fruit and yogurt bark--taking only minutes to make. It's also a fun recipe to enlist help from the kids. They'll enjoy sprinkling on the toppings and everyone will revel in the memories being made. Memories made around the kitchen during the holidays are the best! And, of course, everyone will love the sweet treat enjoyed at the end.
Knowing that I always need food storage containers during the holidays, I picked up a few packages of Rubbermaid's TakeAlongs at Walmart while shopping for groceries. Their secure seal and size make them perfect for storing holiday leftovers. I love that they come in red and green for the holidays which also makes them perfect for transporting treats like this bark to holiday gatherings or packaging up a batch to gift to family and friends. Tis' the season for giving! Oh, and they are also microwave, dishwasher, and freezer safe. Holiday score!
Each year the kids and I make a homemade treat to share with friends and family at the holidays. There have been hot chocolate spoons, white chocolate lollipops, and cookies--just to name a few. This year's special treat is going to be this White Chocolate Cranberry Bark. And look at how great it looks tucked inside Rubbermaid's TakeAlongs. The red from the cranberries and the green containers create a fun combination of traditional holiday colors--red and green! I sprinkled a flurry of shredded coconut on part of our batch of bark for a wintry white effect--a perfect holiday goody!
If you are looking for a quick and easy holiday recipe, this one is ideal! It's a delectable treat that's sure to be a crowd-pleaser at holiday gatherings. But it's also a perfect treat to package up and gift to family, friends, and neighbors. Ready to mix up a batch? Here's how!
White Chocolate Cranberry Bark Recipe
  • 1-20 oz. package vanilla almond bark
  • 1/2 cup dried cranberries
  • 2 cups white chocolate morsels (reserve 1 cup)
  • 1/2 cup shredded coconut (optional)
  1. Line a baking tray with parchment paper.
  2. Break up the vanilla almond bark into pieces in a microwave-safe bowl. Heat the bark in the microwave on high for 15-30 second intervals. Stir after each heating. Continue this step until the almond bark is melted and smooth.
  3. Pour the melted almond bark onto the baking tray and spread it out evenly
  4. While the bark is still melted, sprinkle on the cranberries, 1 cup white chocolate morsels, and shredded coconut.
  5. Melt the remaining cup of white chocolate morsels in the same way the almond bark was melted. Drizzle it over the bark.
  6. Allow the bark to harden. Putting it in the refrigerator will speed this process up. Break or cut it into pieces. Enjoy!
