Apple Croissants with a Caramel Drizzle

I am participating in The Improv Cooking Challenge today hosted by Lady Behind the Curtain.  This month's ingredients were apples and caramel.  Here is my recipe for the challenge.
Ingredients:
*1 package of croissant dough
*1 large apple
*1 tsp. lemon juice
*3 tbsp. brown sugar
*2 tbsp. butter
*1/2 tsp. cinnamon
*1/2 tsp. vanilla
*caramel topping

Directions:
1. Dice the apple into small pieces.
2. In a microwave safe bowl, combine the apple pieces and lemon juice and stir.
3. Add the brown sugar, butter, cinnamon, and vanilla.
4. Heat in the microwave on high for 30 seconds and stir.
5. Unroll the croissant dough and spoon a small amount of the apple mixture onto each piece of dough.
6. Roll the pieces of stuffed croissant dough up and place them on a baking sheet.  Spoon a small amount of the liquid part of the apple mixture over each croissant.
7. Follow the baking instructions on the croissant package.
8. When you remove the baking sheet from the oven, be sure to take the croissants off immediately so the apple mixture that may have seeped out from the dough doesn't cause the croissants to stick.
9. Drizzle a small amount of caramel topping onto each croissant, cool, and enjoy!
