Chocolate Chip Cookie Sandwiches with a Whipped Marshmallow Filling

For this yummy confection...

1. Bake your favorite chocolate chip cookies.
2.  While they are cooling, make the filling by blending together equal parts whipped cream and marshmallow cream.  Optional:  For a richer taste, you could also add a small amount of vanilla extract to your filling.  (Tip: Let the filling chill in the refrigerator while the cookies continue to cool.)
3. Spoon a generous portion of the filling in between two cookies.
4. Enjoy with a tall glass of milk.

Have  you noticed how many posts this summer have been about food?  Let's just blame pregnancy.  I think baby Eli has a sweet tooth or at least he is giving his mommy one.
